Mediterranean Flatbreads

  • 5 oz hummus 
  • 1/2 cup of roasted red bell pepper
  • 1/2 cup feta 
  • 1/2 cup cherry tomatoes 
  • 1 small diced zucchini Flatbread or pita 
  • Sautee zucchini in olive oil and season with S&P
  • Spread hummus on the Flatbread as you would pizza sauce
  • Add chicken, bell pepper, cherry tomatoes and zucchini. Top with feta
  • Broil for 1 minute to crisp up top
